Wind spooked horses

Anyone any advice on how to cope with a horse that's virtually unrideable in the wind? My young horse is a lovely, lovely horse and is super talented, but is a nightmare when it's windy! It's got to a stage where I just lunge her when it's windy, but that's not going to help me at shows in wet, windy Ireland...
