My horse loves these.

I spent part of my night baking  to give as gifts to the various equine-owning people in my life. They came out well, I think. I guess I won't know for sure until they get horse-tested, though. ;) I'm hoping they go over well with the furry beasts, as the  was a nice, easy one.

Ingredients:
Makes about 12, depending on the size.
-Candy canes/starlight mints, smashed
-1 C flour
-1 c oats
-2 tbs molasses
-1/2 c water

-Pup your mints. Of course, I was doing this at about 12am, so I had to be quiet about it. I used th end of a . Pour the crushed bits into a bowl.reheated the oven to 350°F, and line cookie sheets with foil. (It'll make cleanup easier!)

-In a bowl, combine the oats and the flour. Mix it up a bit. Don't bother using a spoon or a spatula; you're just going to have to get your hands in there anyway.

-Add the 1/2 cup of water, and the 2 tbs of molasses. Make sure you don't add too much liquid, but if you do, just add a bit more of the dry stuff.

-Squish it alllll up, real good. Make sure it's thoroughly mixed. It's going to be really, really sticky, so don't plan on touching anything for a while. If you're like me, and had to add more flour without using your hands, good luck.

-Don't taste the molasses. It's nasty on its own.

-Using your palms, roll bits of the 'dough' into balls.

-Unlike in the above photo, dip the tops of the balls in the crushed peppermint candy before you put them on the pan. I found that the dough loses stickiness the longer it's out, so best to get the candy on there right away. Try to make sure that the candy stays on top-- it's going to melt, and the more of it that melts ON the 'cookie', the better.

-Bake for about 20 minutes, until the peppermint bits are melty. Take out of oven.

-This part may injure your fingers, so use tongs or something if you're sensitive. You're going to want to get the treats off the foil and onto a plate to cool, right away! If you don't, and any of the peppermint candy is melted underneath the treat, it's much harder to get off of the foil.

I made about four batches. I let 'em cool in a pile on a plate.
